The healthy, freezer-friendly breakfast that’s packed with veggies and will make your coworkers ask, “What smells so good?”

I live in Boston, where the weather is typically pretty terrible. In order to spare my shoes from salt damage on my commute (I walk in the snow to the train station and then take the train into work), I store all my work shoes under my desk in my office. It’s a very practical and convenient arrangement, but it lends itself to the occasional insecurity that my office just might smell like feet. What better thing to dispel that fear, though, than a super delicious breakfast that smells so good, coworkers shout over the cubicle walls to find out what it is?

Make it healthy, too, and you have this wonderful vegetarian meal prep breakfast oatmeal. So far as healthy breakfast meal prep ideas go, this oatmeal with vegetables is a no-brainer. No, it’s not overnight oats, but this vegetable oatmeal recipe is freezer friendly, so you can make a big pot ahead of time, portion it out into containers, and grab and go on busy weekdays.

In addition to shredded carrots and zucchini, each portion of this oatmeal has a scoop of Vega protein+greens powder and Orgain superfoods powder, so you’re really covering a lot of nutritional bases with this easy, tasty breakfast. If you like it on the sweeter side, this vanilla stevia sweetener is a great addition.

So add these oats to your weekly meal prep plan and have a quick, healthy breakfast that’s easy to reheat at the office.

I use my food processor to shred the carrots and zucchini, but you could also grate them on a box grater, or even puree them in the blender if you wanted.

Spiced steel-cut oats with vanilla protein, carrots, and zucchini

This healthy grab and go breakfast is nutritious and packed with veggies, but it tastes like dessert!

Ingredients

  • 1 c steel-cut oats
  • 6 c unsweetened vanilla almond milk
  • 5 large carrots grated
  • 3 medium zucchinis grated
  • 1/2 c ground flax/chia seed
  • pinch Salt
  • 3 tbsp cinnamon
  • 1 tbsp allspice
  • 6 scoops vanilla Vega Protein + Greens
  • 6 scoops Orgain superfood powder
  • Sweetener to taste if desired (I like SweetLeaf Sweet Drops Liquid Stevia in Vanilla Crème)
  • Dates (or other dried fruit) sliced

Instructions

  1. In a large stock pot, bring oats, nut milk, shredded vegetables, seed mix, and spices to a boil. 

  2. Then, reduce to simmer until liquid is absorbed, about 20 minutes. 

  3. Add sweetener to taste. 

  4. Divide into six BPA-free, microwave-safe containers, and top with sliced dried fruit.
